The no-added-sugar frozen dessert

No added sugar

A frozen dessert that skips the sugar. Snowfall's frozen kefir is sweetened with stevia and erythritol instead — so the fresh, fermented tang of real kefir leads, and sweetness stays in the background.

● No added sugar

Most frozen desserts are built on sugar. Frozen kefir doesn't need to be. Because it starts with real, cultured kefir, it already carries a fresh, tangy character of its own — so instead of pouring in sugar, we sweeten gently with stevia and erythritol and let that fermented flavour do the talking.

What “no added sugar” means

“No added sugar” is exactly what it sounds like: no sugars, and no sweetening foods such as honey, syrups or fruit-juice concentrates, are added to the recipe at any stage. Whatever sweetness there is comes entirely from stevia and erythritol.

It's worth being precise, though. Frozen kefir is made from cultured dairy, and all dairy contains naturally occurring milk sugars. “No added sugar” describes what we don't put in — it isn't a claim that the dessert contains no sugars at all.

Frozen kefir is a dairy product and naturally contains a small amount of milk sugars. “No added sugar” means no sugars or sweetening foods are added; sweetness comes from stevia and erythritol.

Sweetened with stevia and erythritol

Two sweeteners carry the flavour, and neither of them is sugar:

Stevia is a plant-derived sweetener, drawn from the leaves of the stevia plant. A very small amount delivers a clean sweetness, which is why it can stand in for spoonfuls of sugar.

Erythritol is a naturally occurring sugar alcohol, found in small amounts in some fruits. It lends body and a rounded, sugar-like sweetness without being a sugar itself.

Used together, the two round each other out — stevia's brightness and erythritol's body — for a balanced sweetness that never overtakes the kefir.

Why we skip added sugar

The simple answer is flavour. Load a cultured dessert with sugar and you bury the very thing that makes it interesting. By leaving the added sugar out, we let the fresh, fermented tang of the kefir lead, with sweetness playing a supporting role rather than the main part.

It keeps the dessert honest, too. Frozen kefir is meant to taste of what it is — cultured, tangy, clean — and that comes through most clearly when sugar isn't doing the talking.

Full of flavour, not sugar

Skipping added sugar doesn't mean skipping pleasure. Frozen kefir is creamy and satisfying, with a lightness that dense, sugar-heavy ice cream rarely manages. The finish is clean rather than cloying, and the tang keeps every spoonful feeling fresh right to the last.

In one line: No added sugar, sweetened with stevia and erythritol — a cultured frozen dessert where the fermented tang leads, freshly served at Snowfall in Marylebone.

Common questions

Is frozen kefir sugar-free?

We describe our frozen kefir as having no added sugar rather than “sugar-free”. As a dairy product, it naturally contains a small amount of milk sugars — so “no added sugar” is the accurate description. No sugars or sweetening foods are added; sweetness comes from stevia and erythritol.

What is frozen kefir sweetened with?

With stevia, a plant-derived sweetener, and erythritol, a naturally occurring sugar alcohol. Both are sweeteners rather than sugars, which is how the dessert has no added sugar while still tasting rounded and sweet.
